Tis the season for outdoor living and chargrilled meals. Fall is one of our favorite times and – in our opinion – the best time for camping, building a fire, and making some delicious meals. Whether you are car camping, or packing in for the night, bring a tasty meal brings people together and makes the outdoors that much more enjoyable. Pssst… Don’t forget the bear bag, your Crazy Creek chair, and all the necessary utensils. Planning is key!
1) BBQ Chicken Foil Packets
Is foil not amazing? Okay maybe not AMAZING, but pretty stinking cool for on the road meals! Prep before you go so you’re left with hassle-free cooking, simple and easy. You will need:
4 boneless skinless chicken breasts
2 cups barbecue sauce
2 cups drained pineapple tidbits
1 red bell pepper, diced
1 small red onion, diced
We like to pre-cook the chicken before-hand and then add the BBQ sauce and veggies, wrapping in tin foil to heat up quickly when camping. This ensures the chicken is cooked thoroughly and all that is left is to warm it up over the fire!
These foil packets can be used for almost anything, get creative! Try a potato mix for breakfast with some cut up potatoes, scrambled eggs, butter, and veggies! Potato scramble, enjoy!
2) Chili Campfire Bake
This recipe from Six Sister’s Stuff is perfect for the kiddos! Plus, fall is the perfect season for some warm chili around a campfire. This recipe is best made when you have a grill top, so save this one for the car camping sites or somewhere a grill top is provided. Also, make sure to use a pan that can be used over a fire, don’t burn your nice skillets! You will need:
1 (16 oz) box elbow macaroni pasta
1 (15 ounce) can chili
1 (7 ounce) bag corn chips
1/2 cup cheddar cheese, shredded
Cook the macaroni pasta until done and then add chili and bring to a simmer.
Remove from heat and top with corn chips and Cheddar cheese. Serve hot and enjoy!
3) Monkey Bread Fun
Monkey bread is a classic recipe that has been around for ages, and this one – from Say No Sweet Anne – is a winner! Always a warm, feel-good recipe, heat some up for a sticky treat on your next outing. Remember: gobble up every last bit so the ants don’t come running for this sugary treat! What you will need:
1 can buttermilk biscuit dough (This is the thing that needs refrigeration)
1/2 cup cinnamon sugar. (2 tbs cinnamon to 1/2 cup sugar. Taste and add more cinnamon if you’d like.)
1/2 cup brown sugar
1 stick salted butter
Bake for 5-10 minutes or until puffed up and center is cooked through. Be careful to avoid direct heat on the bottom, as it might scorch. Remember to limit the intake with the children, no one needs over excited kids running around the wilderness!
4) Pizza in the Outdoors
Quite possibly one of the coolest and most simplistic inventions ever, the camp cooker. Campfire meals are limitless with a camp cooker with so many creations from healthy meals to yummy and quick sandwiches. You could just wrap up some day old pizza in some handy tin foil and call it a day, but that’s just no fun…and this is just so easy! What you will need:
Pillsbury Pizza Crust Dough
Shredded Mozzarella Cheese
Be careful on the amount of cheese as you don’t want any wasted in the fire! Cheese is precious.
5) Mexican-style Corn on the Cob
What’s a campfire without some delicious grilled corn on the cob? Spice it up with a couple of extra condiments for a yummy crowd pleaser.
Ingredients include mayonnaise, corn, shredded Parmesan cheese, chili powder, salt and pepper.
Grill the corn to perfection over the fire and then add mayo and other toppings as desired! Don’t forget some corn holders to make the devouring process a tad easier.
